Summer Boredom Buster Kids - COOKING!

My 3 year old and I had a cooking date. We decided to make a sweet treat. This one was particularly easy!
And so good!







Here is the recipe!
Ingredients
  1. 3 cups flour
  2. 2 1/2 tsp. Clabber Girl baking powder
  3. 1/2 tsp baking soda
  4. 1/3 cup sugar
  5. pinch of McCormick Allspice
  6. 1 stick butter, cut into small pieces
  7. 3/4 cup Hershey cinnamon chips
  8. 1/2 - 3/4 cup milk
  9. 1 egg, for egg wash
  10. Cinnamon Sugar to sprinkle
Instructions
  1. Preheat oven to 400 degrees F.
  2. Mix dry ingredients into a large bowl. Work in the cut butter until the mixture resembles cornmeal.
  3. Add the chips and toss.
  4. Add milk slowly until the dough comes together.
  5. Remove from bowl and shape into a square that is 1 inch thick. Cut into triangles. Place each triangle on a cookie sheet that is lined with parchment paper.
  6. Beat egg in small bowl and brush a small amount on each scone.
  7. Sprinkle with cinnamon sugar.
  8. Bake for 15 minutes.
  9. Let cool.

Summer Boredom Buster Kids - COOKING!

Have you heard of Super Healthy Kids?

I decided this recipe would be perfect for my 5 year old to make for family dinner.

I made a few tweaks.
 Instead of doing double beans I swapped the black beans for left over chicken and added green chilies to the chicken. Because of the chilies I nixed the salsa. 
My kids were big fans, and we will be having them again.







 My 5 year old did EVERYTHING except put in the oven, and take out of the oven.

Here is HER recipe:
  • 6 tortillas
  • 1 egg white
  • 1 can refried beans (fat-free or mashed pinto beans)
  • 1 can El Pato Salsa de Chile Fresco
  • 2 tsp Oil
  • Shredded Cheese
  • Desired Toppings: Lettuce, Tomato, Cilantro, Salsa, Sour Cream, Plain Yogurt

Add egg whites to a bowl and mix with whisk.
Add beans to the middle of your tortilla, and sprinkle with cheese.
Begin folding your tortilla. Start with one side and fold up an inch and then fold sides and then add more egg white where you make the last fold.
Flash-fry chimis by placing in a pan of 2 tsp oil on medium-high heat. Heat on both sides for 1 minute until golden brown.  Place chimichangas onto a pan covered in foil, seam-side down.
Bake at 350 for 12-15 minutes.

Cook Time12 minutes
Yield6 Servings

Ladybug Cookies

I try to do some kind of baking each week with the kids. They love to be in the kitchen with me, so we decided to "wing it" and make these.

Here is the recipe:

1/2 cup butter, softened
1/2 cup shortening
1 1/2 cups white sugar
2 eggs
2 teaspoons vanilla extract
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt

Red Baker's Chocolate
Mini Chocolate Chips

Directions
Preheat oven to 400 degrees F (200 degrees C).
Cream together butter, shortening, 1 1/2 cups sugar, the eggs and the vanilla. Blend in the flour, cream of tartar, soda and salt. Shape dough by rounded spoonfuls into balls.
Place 2 inches apart on ungreased baking sheets.
Bake 8 to 10 minutes, or until set but not too hard. Remove immediately from baking sheets.


Melt the Red Chips, then have the kids dunk cookies in the red chocolate and sprinkle with mini chips.


Simple, and good for an afternoon snack. :)

Snow Man Pancakes!

We had pancakes for lunch because I needed a break up in the lunch routine.
It was snowing, and seemed like a perfect, "You're the coolest mommy EVER" moment, so...we went with it!

Pancakes are my friend Hilary's recipe:
2 cups all purpose flour
1 cup oats

1 tsp baking soda
2 tsp baking powder
1/2 tsp salt
1/4 cup sugar
2 eggs
2 tsp vanilla
1 cup milk
1 cup water.



1/4 cup batter yields 16-18 pancakes


After I made them, I added a bacon scarf, chocolate chip eyes, nose and buttons and marshmallow snowballs. I saved the extras for breakfast tomorrow. I'll just pop them in the toaster and we will be good to go!

Edible Snowmen

Mini Powdered Donuts, Pretzel Sticks, Candy Corn, Mini Chocolate Chips, Reeses Peanut Butter Cups and Pull and Peel Twizzlers. Whew!

We had a bunch of friends over for dinner and dessert and embraced the different age groups by doing a project/edible craft.
Peel the Pull and Peel Twizzlers
Then pass out 2 pretzel sticks, 1 candy corn, several mini choco chips, and 1 PB cup.
Peel the PB cups, but save the dark wrapper.
This is my 21 month old using her fine motor skills! 
Pass out the donuts (3 a person) and add eyes, nose and buttons
Wrap the licorice around the neck and add the hat.
then eat everything but the wrapper!

This took a good 30 minutes, but I had 6 kids so it might take less if you have a smaller group.

Earth Day Activity #5 - Earth Cups

We have been talking and studying about the Earth all of the week, so today we let loose and made a cool snack.

You need oreos, chocolate pudding, dixie cups, gummy worms and kids.
Put the oreos in a bag and let the kids get creative on crushing them, spoons fists, whatever you like...
Then put the pudding in the cup and tell them it is mud...let them inspect...
Next add the dirt...(oreos)
Then add the worms!
Now dig in!  haha Dig into the Earth!
That's it! Something fun to eat on our 3rd day of rain! The kids loved it and it was EASY

A Shamrock Snack

So for Green Week which just happens to fall on St. Patrick's Week we decided to make Shamrock Snacks.

Here is what you need:
Almond Bark, Green Sprinkles, Pretzel Twists and Pretzel Sticks and Wax Paper.
You also need some kids who just woke up from nap who are hungry.
So arrange the pretzels to look like a shamrock.  I let them figure it out for a few minutes so they could follow the pattern I had made.
Heat 1 cube of the Almond Bark at a time, until it is melted, then dollop into the center of the pretzels.  Let them sprinkle on the green stuff but be careful because the almond bark is still hot!

This is what it should look like.
Then let the kids go play and arrange the two sides to lay on top of the stick...to make it 3D and so they are sticking to the pretzel not the bark...
Sorry for the brightness in this picture but you can see what I mean in this picture how they are all layered on top of the stick...
Mmmm, let's eat!  Yes my son is wearing shorts and a long sleeved shirt...it was 55 and hello its Colorado.  Oh and my typical 2nd born there in the middle, broke all of the pieces so she could eat "the bits" this is how she prefers to eat everything...broken.  Lastly we were eating while the kids were walking home from school so that explains L on the end looking in the distance. :P

We made 2 dozen of these, with 2 squares of bark.

Smores Nachos

My husband had the treat last night for FHE, of course he had to change a classic its something I love about him!

Here we go...
Basic S'mores ingredients.
Sporting new jammies! :)
Breaking up the crackers and stealing a few.
Laying them flat on the tray.
Adding the chocolate. Then bake for 6 minutes on 400 so the chocolate gets soft.
Now its marshmallow time. Don't touch the cookie sheet its hot!
Broil for 3 minutes until the marshmallows puff up and turn brown.
Dig in!

Pink Math

First I made a graph, and then colored directions.  The gray represents the color white.

Then I gave the kids Q-Tips to apply the number of dots.

Then mix to see what color it makes.

She was actually more excited than this picture shows. :)

I left 3 columns blank so they could make up their own pink recipe.

This was very fun, and they learned that a little red goes a long way!
